Cauliflower Fritters

Roasted cauliflower turned is turned into a fritter and makes for a great addition to breakfast!

OVERVIEW

I think I’ve mentioned it before, but i’m a big fan of turning food into a handheld or some kind of patty. These fritters can be eaten in so many ways; as a burger with your favorite toppings or over a salad cut in pieces.

These fritters are super easy to make if you already have cauliflower roasted and ready to use but if not, there are other ways around it!

Some other sides that go really well with these fritters include avocado, fried egg, fresh fruit, a bed of greens, fresh herbs, hot sauce, or your go-to condiment.

Full Recipe

  • MAKE: 6 FRITTERS
  • TOTAL TIME: 15 + OPTIONAL ROASTING
INGREDIENTS
  • 1 head chopped & roasted cauliflower**
  • 1/2 cup gluten-free flour

  • 1/3 cup fresh parsley, chopped

  • 2 eggs

  • 1/2 tsp paprika

  • 1/2 tsp garlic powder

  • salt & pepper

  • 1 tbs olive oil

INSTRUCTIONS
  • Add all ingredients to the bowl of a food processor and pulse until well chopped and mixed. Alternatively, use a potato masher to mash in a bowl.

  • Shape mix into patties using your hands and set aside on a plate.

  • Heat a large skillet over medium heat then add olive oil.

  • Cook fritters on each side for about 5 minuets or slowly continuously flip fritters to achieved a nice golden color and a cooked inside, though it’ll still be moist on the inside.

  • ** If you don’t have roasted cauliflower or prefer to make this more quickly, you can boil cauliflower florets until they are soft enough to mash.

  • You could also try using raw cauliflower that is minced or “riced”. I have not tried this method but it could work similarly.
