Bored of the same breakfast? Switch things up with these super easy savory pancakes!
I get bored of eggs, oatmeal, and smoothies really easily. When I want to change things up, pancakes or the like are my go-to!
These pancakes are super easy, delicious, gluten-free, filling, and perfect for when you don’t have much in the fridge (including eggs!)
That’s another thing, if you don’t have any eggs, this is such a great breakfast to make when you don’t want something sweet. But who am kidding, pancakes like these can be eaten at any time of the day!
Get creative with toppings, add more or no cheese, hot sauce, differnt herbs, or really any vegetables. OR you could also use this batter (minus the spices) base to make sweet oat panckaes with fruit or chocolate but we’ll save that for another recipe 🙂

Cheesy-Herb Oat Pancakes

INGREDIENTS
1 1/2 cup rolled oats
2 tsp baking powder
1/4 tsp baking soda
1/2 tsp garlic powder
few dashes salt, pepper & cayenne (optional)
1 cup water
1 tbs apple cider vinegar
Toppings
1/4 cup red onions, diced (I sauteed mine first, optional)
1/3 cup fresh chopped herbs (I used parsley & cilantro)
1/3 cup cheese, shredded, I used cheddar
avocado, hot sauce, green onions, extra herbs, for serving
INSTRUCTIONS
Add all the dry ingredients to a blender and blend until combined and resembles an even flour. Pour in the water and apple cider vinegar and blend again to combine.
Heat a large skillet over medium-high heat and add 1 tbs of oil. Pour in the batter into rounds and tops with onions, herbs then cheese.
Flip the pancakes when they’re slightly brown on the outside and show small bubbles popping in the batter. Let them cook until no longer wet inside (they will be kinda soft because no egg) and until cheese is browned.
When ready, serve with extra herbs, avocado, and hot sauce, if desired or like my pancakes loaded and spicy like me! Enjoy!
