A great recipe to keep ready-to-go so you have a quick snack that fills you up without feeling like you had too much!
Chocolate and coconut has got to me one of my favorite flavor combinations as well. I used to always get dark chocolate and coconut gelato together. These bars don’t taste like gelato….but they do taste delicious!
I used a chocolate protein powder that I find quite sweet so that with the chocolate, I didn’t add any extra sweeteners like honey or anything. Depending on the kind of protein powder that you use, you shouldn’t need to add any either, but it’s really personal preference!

Chocolate Coconut Protein Bars
Full Recipe
- MAKES: 12 bars
- TOTAL TIME: 15min + cooling
INGREDIENTS
5 tbs oat flour (make your own by blending oats in a blender)
2 scoops your favorite protein powder, I used chocolate from Genuine Health
1/4 cup unsweetened shredded coconut + extra for topping
2 tbs cocoa powder
1/3 cup your fav nut butter, I used almond butter
1/3 cup non-dairy milk, and more as needed
1/3 cup dark chocolate chips
INSTRUCTIONS
Start by making your oat flour if needed. You could also use 4 tablespoons of coconut flour, but I haven’t tried any other kind of flour. Oat flour makes for a nice texture and flavor.
- In a mixing bowl, mix together oat flour, protein powder, shredded coconut, cocoa powder, nut butter and milk. It will be crumbly but if it holds together when you pinch it together, it should be good. But add more milk just ass necessary, you definitely don’t want it too wet. If you don’t want to melt the chocolate for the top of the bars, you can just as easily add the chocolate chips into the mix to skip the next steps.
Line an 8×8 square pan or a loaf pan with parchment paper. Pour bar mix into the pan and firmly press down using a spatula or your hands until it’s even.
Put the bars in the fridge while you melt the chocolate, if you choose to use it. In the microwave in 30 second increments or in a double boiler on the stove top, melt the chocolate until it’s smooth, avoid overcooking it.
When the chocolate is melted, pour the chocolate over the bars in a smooth layer. Sprinkle over extra shredded coconut then put back in the fridge for at least 20 minutes, or the freezer for 10, until hardened.
Once hardened, cut into bars and enjoy! Keep in fridge for up to a week.
