Breakfast, dessert or an anytime snack, this granola is crunchy, chunky & oh so delicious!
My mom recently told me she hadn’t really thought to make her own granola until she tried mine ?
Guys, it’s that good! I can’t really describe the irresistible crunch and flavor that comes from this granola.
The key is to bake it nice and slow without touching!! Then on top of that, this Chai Spice with deep molasses and earthy spices just makes it warm and cozy and so so good.

Crunchy & Chunky Chai Spiced Granola
Full Recipe
- MAKES: 4 cups
- TOTAL TIME: 50min
INGREDIENTS
2 cups old fashioned oats
1 1/2 cup unsweetened large flaked coconut
1/2 cup almonds, roughly chopped, or your fav nut.
1/2 cup sunflower seeds
1/2 cup pumpkin seeds (pepitas)
Spice Mix:
2 tsp cinnamon, 1/2 tsp ginger powder, 1/2 tsp cardamom powder, 1/2 tsp ground cloves, 1/2 tsp salt, 1/4 tsp ground black pepper
Wet Ingredients:
1/4 cup coconut or olive oil, melted
2 tbs mollasses
1 tsp pure vanilla
1 egg white, optional, but makes for a super crunchy result
INSTRUCTIONS
Preheat oven to 300F and line a baking sheet with parchment paper.
Mix dry ingredients together in a bowl (including spices), mix wet ingredients together in another bowl, including the egg white.
Combine dry and wet together, it will be crumbly, yet sticky.
Pour the mix onto a baking sheet prepared with parchment paper and lay out as flat and even as you can, so it will create chunks.
Bake for 40 min, checking to make sure edges aren’t burning, they will be a little darker, but that is okay.
Let slightly cool on the sheet until it’s not warm then break into large chunks and pieces.
Funnel the granola into containers and enjoy as you please ? Will keep crunchy for a week.
