Crunchy Melty Peanut Butter Bars

Melt in your mouth peanut butter bars with a nutty crunch topped with chocolate.

OVERVIEW

I would like to talk up these bars and describe how enjoyable they were but honestly they only last about 2 days in our house so it’s a little difficult to be super descriptive. Not to worry, I could never forget the smooth, melt-in-your-mouth texture of these bars that had the perfect amount of crunch and bite from toasted quinoa and nuts with a decedent layer of dark chocolate spread over top. I mean, do you blame me for not forgetting?!

Crunchy Melty Peanut Butter Bars

Full Recipe

  • MAKES: 15
  • TOTAL TIME: 15MIN + COOLING
INGREDIENTS
  • 1 1/2 cup natural crunchy peanut butter

  • 6 tbs coconut oil, melted

  • 1/4 cup maple syrup or honey

  • 1/2 tsp vanilla

  • 1/3 cup dark chocolate chips

  • peanuts, chopped, for topping

  • 1/4 cup uncooked quinoa

  • 1/4 cup unsweetened shredded coconut

  • 1/4 cup sunflower seeds

  • 2 tbs chia seeds

INSTRUCTIONS
  • Line an 8×8 baking pan with parchment paper leaving a little overhang.

  • Heat a medium skillet over medium then toast quinoa until you hear it pops watching it so it doesn’t burn. Set aside.

  • In a large bowl, whisk together peanut butter, oil, syrup and vanilla until mixed.

  • Stir in quinoa, coconut, flax and chia seeds. Mix well.

  • Pour into prepared pan and cool in fridge or freezer for at least 30 minutes.

  • Meanwhile, melt dark chocolate in a small saucepan until smooth over low heat then evenly spread over cold bars. Sprinkle with chopped nuts and return back to fridge to further cool.

  • Remove bars from fridge using parchment paper as handles and cut into squares and store back in fridge. Enjoy!

  • Notes:

  • These do soften pretty quickly and can melt when left in warmer temperatures!

  • Almond butter can easily substituted for peanut butter as well as any nut or seed butter but textures may vary.

  • Any other mix-ins can be added such as oats, more nuts and seeds, just be sure to adjust the butter and oil amount to keep melty texture.

  • Chocolate chips could be added instead of melted on top but i do prefer this way :).
