Breakfast, dessert or an anytime snack, this granola is crunchy, chunky & oh so delicious!
I had a realization about granola while making this: it’s basically a deconstructed, crunchy version of an oatmeal cookie. Especially this Double Chocolate Almond Granola!
I sprinkled chocolate chips onto the warm granola then let it cool which slightly melted the chips and helped form even more chunks! The extra chocolate is totally optional but then it wouldn’t be double chocolate granola…just saying,
This one tastes so good with yogurt & banana but I find myself just eating it on its own.
An added bonus comes from using raw cacao powder and nibs which are both full of antioxidants & magnesium. Plus it’s protein-rich with the almonds, flax meal, and optional collagen powder.
So yummy and good for you, always been one of my favs as breakfast or dessert.
Double Chocolate Almond Granola
Full Recipe
- MAKES: 4 cups
- TOTAL TIME: 50min
INGREDIENTS
2 cups old fashioned oats
2/3 cup unsweetened shredded coconut
1/2 cup almonds, roughly chopped
1/4 cup ground flax seeds
2 tbs raw cacao powder
1 tsp sea salt
1/3 cup almond butter
3 tbs coconut oil, melted
1 tsp pure vanilla
1/4 pure maple syrup
1 egg white, optional, but makes for a super crunchy result
1/4 cup chocolate chips, I used dark & white
2 tbs cocoa nibs, optional
INSTRUCTIONS
Preheat oven to 300F and line a baking sheet with parchment paper.
Mix dry ingredients together in a bowl, mix wet ingredients together in another bowl but reserve the maple syrup.

Pour the mix onto a baking sheet prepared with parchment paper and lay out as flat and even as you can. Drizzle the maple syrup all over. This helps create chunks.
Bake for 20 min, checking to make sure edges aren’t burning, and breaking up into very large pieces with a spatula to let in some air.
Bake for another 20 or go by smell and color of granola. There’s a fine line between perfect & overcooked!
Let slightly cool on the sheet then sprinkle with chocolate chips & nibs.
Don’t break up the pieces! Funnel the granola into containers and enjoy as you please ?
