Healthier chewy oatmeal cookies with all the fixings, or not! These cookies are great even without the add-ins! 

Who doesn’t love a good oatmeal cookie? Okay, I’m sure there are lots of people who would prefer a good ol’ chocolate chip or anything but oatmeal..but trust me on these! They’re chewy, they’re crispy, they’re sweet but not too sweet, they’re flavorful AND they’re super easy to make! No applesauce, no flour, no crazy secret ingredients. Just good, classic oatmeal cookies.

I’ve made this recipe without any of the add-ins and they’re still delicous! Pick and choose what you like in your cookies or keep em plain, either way, if you’re looking for an easy cookie recipe…this is it!!

Easy Loaded Oatmeal Cookies

Full Recipe

  • MAKES: 12
  • TOTAL TIME: 18
INGREDIENTS
  • 1/2 cup butter, or ghee or coconut oil, melted

  • 1/3 cup coconut sugar

  • 2 tsp vanilla, or 1 tsp works!

  • 1/2 tsp salt

  • 1 1/2 cup quick oats, I have also used old-fashioned oats and both work

  • 1 egg

  • 1/4 cup raisins, I sometimes substitute these for chopped nuts

  • 1/4 cup dark mini chips

  • 3 tbs pumpkin seeds

  • 2 tbs unsweetened shredded coconut

INSTRUCTIONS
  • Preheat the oven to 350F and line a baking sheet with parchment paper

  • To a mixing bowl, add melted butter and coconut sugar and whisk until smooth and combined then stir in the vanilla & salt.

  • Next, roughly stir in the oats followed by the egg until all incorporated.

  • Fold in the raisins, pumpkin seeds, chocolate chips and shredded coconut.

  • Using a cookie or a larger spoon, drop the dough into 12 even rounds on the cookie sheet. Gently flatten each cookie out as they don’t spread much and flattening them yields a crisper cookie (on the outsides). Don’t worry about making them perfectly round, this will take you too much time and you want this recipe to be easy!

  • Bake for 8-9 minutes or until they’re golden brown.

    Remove from oven and let cool at least 30 seconds, if you can, before devouring them! Enjoy!
