Grilled salmon over fresh greens and warm quinoa topped with a creamy yogurt dressing.
OVERVIEW
I made this salad on a whim after having left over salmon from grilling a recent night. It ended up being really good. So good I want to share the recipe with you!
If you have some salmon in the freezer and some greens in the fridge, it’s always a good options to make a salad. It’s a quick and healthy lunch!
I also had the quinoa made but it usually only takes about 20 minutes to cook, so enough time to prepare the salad and clean up too! Or to enjoy a drink, listen to some music, make a dessert, so many options really! Well, sometimes, you know.

Grilled Salmon & Quinoa Salad

INGREDIENTS
1-2 salmon fillets, depending on serving
1 cup quinoa
4 handfuls fresh greens, I used baby spinach & arugula
2 stalks celery, thinly sliced
1 cucumber, sliced
2 handfuls sprouts, I used alfalfa
1/4 cup fresh parsley, chopped
Dressing:
1/3 cup plain Greek yogurt
3 tbs olive oil
2 tbs lemon juice
1 tbs white wine vinegar
1 tsp dried dill weed, optional
salt & pepper to taste
INSTRUCTIONS
Cook quinoa according to package if you don’t have some made.
Salt and pepper flesh sides of the salmon before cooking.
Heat an outdoor grille or a large skillet to medium heat. Place salmon directly on grille and grill for about 5 minuets or until flaky and cooked through.
If using a skillet, add some oil and cook for about 8 minuets or until cooked.
Meanwhile, mix all dressing ingredients well then taste test and set aside.
In a salad bowl or on a plate, top warm and cooked quinoa with a of layer greens, celery, cucumber and sprouts. Place salmon on top, drizzle with dressing and enjoy!
