OVERVIEW

It seems like there’s always some kind of cabbage in my fridge yet, I don’t feel like I eat it a lot! Cabbage is one of those vegetables where you rarely use the whole thing, then are left with lots you don’t know what to do with. This is where this juice comes in nicely and refreshingly.

There are lots of other recipes that involve cabbage-like slaw, kraut, salad, soups, or bowls, so don’t worry if you don’t want to drink it.

I have never tried this juice with green cabbage or any other cabbage, and I wouldn’t recommend it. Red cabbage has a deliciously high amount of both vitamin C and K.

The deep purple color is a sign of its unique antioxidant and anti-inflammatory properties.

When red cabbage is mixed with lemon and cucumber, it’s like a flavor bomb of vitamin c, so packed with vitamins to strengthen your immune system.

And pear, carrot and ginger all have antioxidants too! This juice has a good balance of sweetness and would be good with even less pear, depends how sweet you’re feeling.

Full Recipe

  • SERVES: 2
  • TOTAL TIME: 15 MIN
INGREDIENTS
  • 1/2 of a medium red cabbage

  • 2 pears

  • 1 carrot

  • 1 cucumber

  • 1-2 lemons

  • 2 inch piece of ginger

INSTRUCTIONS
  • Prepare your juicer with the right attachments. If you don’t have a juicer, there might be some variations on a smoothie you could make, but I’ve never tried it. Could be good!

  • Wash and cut each ingredient so it fits nicely into your juicer.

  • Run each ingredient through the juicer and optionally save them for another recipe.*

  • Pour juice directly into one or two chilled glasses and sip, cheers!

  • Notes:

  • *Pulp from the vegetables can be used for some other recipes. Here’s one I’ve tried:

  • Juice Pulp Crackers from The Green Creator
  • Crackers are usually my go to with the left over juice pulp but there’s so many different recipes you can make! Let me know if you’ve ever tried any!
