Shaved Brussels sprouts, quinoa, toasted walnuts, apples, parsley and an easy vinaigrette come together for a delicious anytime salad!
OVERVIEW
I love having a meal like this ready to go, if I don’t, I grab something like a bag of chips or a protein bar but this one has fat, fiber and protein so it keeps you full for a long time!
Make this salad in 20 minutes to keep in your fridge during the holidays so it’s ready to go for when you need something filling, nutritious and super tasty!!

Shaved Brussles Sprout & Quinoa Salad

- MAKES: 3 CUPS
- TOTAL TIME: 35 MIN
INGREDIENTS
1/2 cup toasted walnuts
1 1/2 cup shaved brussels sprouts
1 red apple, cored and chopped
1/3 cup fresh parsley
1 1/2 cup cooked quinoa (about 2/3 cup dry)
1/4 cup crumbly goat cheese, for topping, optional
Dressing:
1/4 cup olive oil
3 tbs apple cider vinegar or any really any vinegar you have
1 tbs honey
1 tbs mustard, any works!
salt & pepper to taste
INSTRUCTIONS
To shave the Brussels, you can use a food processor or a mandoline but I use a good ol knife to very thinly chop them.
Toast your walnuts in a skillet over medium heat for a few minutes until they start to “pop”, keep a close eye. If you want even more flavor, you could add some honey here to slightly candy them!
Mix dressing ingredients together in a small bowl and taste test. Set aside them mix together cooked & cooled quinoa, toasted walnuts, shaved brussels, chopped apple, chopped parsley and dressing. Taste test again then enjoy with goat cheese (or feta) and enjoy!
