This light, refreshing and summery salad has so many nutritional benefits you might find yourself eating it every other day…or at least I did.

OVERVIEW

One of the things I love about this salad is that it’s so easy to put together. Okay, I take that back – there’s actually A LOT of things I love about this salad, more than just how easy it is to make. For example, it’s delicious, the ingredients might be ones you already have, it’s super packed with amazing benefits and nutrients and it also keeps well in the fridge!

Just to reiterate some of the benefits, i’ll outline them for you:

  • Lentils- contain iron and essential fatty acids that contribute to healthy brain functions.

  • Pumpkin Seeds– a superfood that contains numerous nutrients such as zinc, iron, magnesium, and essential fatty acids all positively affecting our nervous, immune, and metabolic systems. A serious superfood!

  • Spinach- full of vitamin b6 and fiber, helping to produce amino acids to promote proper nervous system functions.

  • Strawberries- also contain vitamin b6 as well as powerful antioxidants such as vitamin C

Cucumbers, parsely, and the components of the dressing also have delicious health benefits. So, pretty much every part of this tasty salad is good for you.

Strawberry Spinach Lentil Salad

Full Recipe

  • SERVES: 2-4
  • TOTAL TIME: 20 MIN
INGREDIENTS
  • 1 cup red lentils, cooked

  • 4 handfuls of fresh baby spinach

  • 1⁄2 English cucumber, halved & sliced

  • 1 bunch Italian parsley, halved

  • 6-8 strawberries, sliced lengthwise

  • 1⁄3  pumpkin seeds, roasted

  • Pickled red onions, optional, use this recipe
  • Dressing:

  • 1/4 cup olive oil

  • 2 tbs fresh lemon juice

  • 1 tbs raw honey

  • 1 tbs dijon mustard

  • 1 tsp dried oregano

INSTRUCTIONS
  • Cook lentils according to package, try not to stir around so the shape of the lentils holds well. This should take about 20 minutes.

  • While lentils are cooking, prepare vegetables for salad: make sure they are washed thoroughly then chop them.

  • When lentils are ready, add them to a salad bowl. Mix in spinach then top with rest of salad ingredients.

  • In a small mason jar, add all dressing ingredients, seal lid and shake it up!

  • Drizzle dressing over salad, saving whatever won’t be eaten without dressing, and enjoy!
