Protein packed, grain-free, and naturally sweetened brownies…need I say more?
OVERVIEW
Made with just 6 ingredients (plus chocolate chips & salt which I strongly encourage) and I promise you can’t even tell the sweet potatoes are in there!
Yes, you can taste the protein powder a little, depending on what kind you use. But if you ask me, this is the best way to consume it ?
I didn’t add any sweetener to the batter because the protein powder I used is quite sweet already and I put all the good good chocolate chips on top too.

Sweet Potato Protein Brownies

- MAKES: 9 brownies
- TOTAL TIME: 35 + roasting potato (40 min)
INGREDIENTS
1 cup mashed sweet potato, instructions follow
1/4 cup coconut or avocado oil
1/4 cup nut butter, I used almond, or addiction oil
1 egg
1/3 cup cocoa powder
2 scoops protein powder, chocolate, preferably
1 tsp vanilla extract, optional
1/2 tsp salt, optional
INSTRUCTIONS
Start by ensuring your sweet potato is roasted so you can easily mash it. I took two medium sized potatoes and poked them all over with a fork then put then on a tray and baked in the oven at 400F for about 40 min or until the inside is soft.
Once your potato is ready, allow to cool. Preheat oven to 350F if needed and prepare an 8×8 baking pan or a loaf pan, with parchment paper. Mash sweet potato until smooth in a bowl. Add in the oil, nut butter and egg. Mix until smooth again.
Stir in the cocoa powder and protein powder and mix. Optionally add in the vanilla and salt. The batter will thicken and seem too thick almost but trust it.
Scrape the batter into the prepared pan then top with dark chocolate chips, optionally. Bake for 20 minutes.
Allow to cool then cut into squares and enjoy!!
