The Best Chicken Slaw with Almond Dressing
Full Recipe
- SERVES: 6
- TOTAL TIME: 45 min
INGREDIENTS
2 cups shredded chicken (I shredded from a rotisserie chicken)
2 loose cups shredded red cabbage, green cabbage works too
1 cup grated carrot
1 cup thinly sliced bell pepper, colored is best
1 cup julienned watermelon radish, or regular radish
1/4 cup each, chopped fresh cilantro, basil and mint
Dressing:
1/3 cup almond butter (or sub peanut or tahini)
3 tbs tamari or soy sauce
1 tbs rice vinegar, or regular vinegar
1 tbs honey or maple syrup
2 minced garlic clove
1 tbs freshly grated ginger, or 1 tbs powdered
Crushed red chili flakes, to taste, optional
Hot water as needed for consistency
Toppings:
1/4 cup sliced almonds
1/4 cup crispy onions (store-bought ones)
Fresh lime
INSTRUCTIONS
Start by preparing your vegetables and chopping your herbs. Either buy pre-cut vegetables, use a food processor, a mandolin, or a good ol’ knife to prepare everything according to the ingredients. You want the veggies to be thin and easy to grab with a fork. Think slaw texture, just don’t worry about it being perfect! A food processor would probably be easiest but I prefer to just use a knife and a secure cutting board.
Get your chicken ready by using two forks to shred already cooked chicken. This is why it’s easiest to use a rotisserie chicken. But you could buy breast, cook them, and shred them. It’s really a matter of what’s easier for you.
Mix dressing ingredients together in a small bowl and taste test. Add hot water as needed for consistency. Usually nut butter thickens when you add liquids so the hot water will help keep it smooth and dressing-like.
In a very large bowl, mix all the vegetables and the chopped herbs together. Keep the chicken separate until eating because it’ll help the vegetables last longer.
When ready to eat, add vegetables to a plate or a bowl, top with desired amount of chicken, sliced almonds, crispy onions, and dressing. I love to add freshly squeezed lime, but it’s personal preference. Enjoy!!
