Do you have a zucchini or a carrot or just one? Any combination works here for a healthy & fast breakfast.
OVERVIEW
Amidst this COVID-19 pandemic, we’re trying to learn to adapt to all the sudden changes. Brett and I were really trying to use up everything in the fridge and avoid going to the grocery store if possible. On this morning, we had two eggs, some vegetables, herbs, and avocado. We definitely had a lot of food, but I had to work with some random ingredients to make a meal…I’ll always take the challenge! Can anyone else relate?
I used chickpea flour as the binder in these pancakes (or burgers if they’re lunch!) but any kind of gluten-free flour could work! As well as any vegetables!
Oh! We had two slices of nitrate-free bacon as well, we were livin’! My favorite breakfasts are always the ones with the most vegetables!
What are your favorite breakfasts? Or lunch if that is more your thing! As you can tell, I like mine smothered in hot sauce…
Zucchini Carrot Pancakes
Full Recipe
- MAKES: 4-5 PANCAKES
- TOTAL TIME: 15 MIN
INGREDIENTS
1 zucchini, shredded
1 carrot, shredded
handful of parsley, chopped
1/4 cup chickpea flour, or any gluten-free flour
1 egg
1/2 tsp both onion & garlic powder
salt and pepper
2 tbs coconut oil, for cooking
avocado, to topping, optional
INSTRUCTIONS
Shred zucchini using a box grater and let sit on a cloth to soak up liquid or use cheese cloth to drain out as much liquid as possible.
Next, shred carrot and chop the parsley or other herbs you’d like to add.
Mix all the ingredients together in a large bowl until evenly textured, the mixture will be very wet still.
Heat a large skillet over medium-high heat and add coconut oil. Drop spoonfuls of the batter in the pan and flatten with a spatula to make the size you’d like.
Cook on one side for about 5 minutes, then flip over and cook until golden brown on both sides. The inside will still be very moist, this is okay as long as they’ve been on long enough for the eggs to cook.
Serve immediately and top with avocado or toppings of choice, enjoy!
